Recipe - Party Chili

This is a great Chili Recipe to make for a party or when entertaining. I have never tried it in a crock pot, but i am sure that you could also reduce it down, let it simmer in the crock pot, and serve it for a meal. We usually cook up large quantities and allow guests to serve themselves.

INGREDIENTS
2 pounds ground beef chuck (very lean)
1 pound Italian sausage (extra spicy is extra good!)
4 (15 ounce) cans chili beans, drained
2 (28 ounce) cans diced tomatoes with juice
1 (6 ounce) can tomato paste
1 large yellow onion, chopped
3 stalks celery, chopped
1 green bell pepper chopped
1 red bell pepper chopped
2 green chile peppers, seeded and chopped
1 tablespoon bacon bits
4 cubes beef bouillon
1/4 cup chili powder
2 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons tabassco sauce
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon brown sugar


DIRECTIONS
Heat a large stock pot over medium-high heat. Brown the ground chuck and the sausage. No need to overcook. Drain off excess grease.

Add all ingredients to stock pot with the browned meat. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.

After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve.

Serving suggestion: We usually set up large bowls of Fritos and shredded cheese to allow guest to create their own "Frito Boat". Line the bottom of chili bowl with fritos, pour chili over top, smother with melted cheese, and enjoy. Others have included a variety of toppings, such as onions, and peppers.
