Graduation Party: Jambalaya Recipe This is a one-dish meal that is awesome for parties, events, reunions, or other large gatherings. Make it ahead of time and freeze it - re-heating is not as good, but works - especially if you need to make large quantities Ingredients 1 1/2 lbs pork boneless roast, cubed 1 1/2 lbs smoked sausage, sliced 2 yellow onions, chopped 3 large green peppers, chopped 3 celery stalks, chopped 12 cloves garlic, minced 1 1/4 cups butter 9 cups chicken broth 6 cups uncooked long grain rice 3 cups roma tomatoes, chopped 1 1/2 cups green onions, chopped 1/2 cup fresh parsley, minced 3 tablespoons Worcestershire sauce 3 tablespoons hot pepper sauce 1 tablespoon salt 1 tablespoon white pepper 2 tablespoons cooking oil Directions 1) Brown cubed pork and sliced sausage in large skillet. Set aside. 2) Saute the onions, green peppers, celery and garlic in butter until crisp-tender 3) Place in a very large bowl, stir in the remaining ingredients Transfer to three greased shallow 3 qt baking dishes. 4) Freeze at this point if needed (thaw completely before cooking) 5) Cover and bake at 375F for 50 minutes, or until rice is tender.
